[July 7: “First-Generation Fukujinzuke Day”]—The Original Taste of Fukujinzuke Revived After 150 Years: Announcing the Release of “First-Generation Fukujinzuke”

Shuetsu celebrated its 350th anniversary last October.

To commemorate this milestone, we are launching “shoso Fukujinzuke,” a product that returns to the origins of Fukujinzuke—originally devised by the 15th-generation Seiemon Noda in 1877 (Meiji 10)—and recreates the flavor it had at the time of its initial release.
In addition, in honor of the seven types of vegetables used in Fukujinzuke and the “Seven Gods of Good Fortune” from which it takes its name, we have designated July 7 as “Sake-Etsu Fukujinzuke Day” and made it the launch date for “Hassō Fukujinzuke.”

The History of Shuetsu and Fukujinzuke

The history of Shuetsu began in 1675 (Enpō 3), when the first-generation Kiyoeimon Noda, a native of Ise Province, founded the business in Hongō under the name “Yamada-ya.”The shop later relocated to Ikenohata in Ueno, where it has continued to preserve its traditional flavors for over 350 years.
Then, in 1877 (Meiji 10), the 15th-generation Noda Seiemon devised “Fukujinzuke.”It is said that the name “Fukujinzuke” was derived from the “Seven Lucky Gods” by the popular writer of the time, Baitei Kinga, in reference to the use of seven types of vegetables.

About “shosō Fukujinzuke”

Released to commemorate our 350th anniversary, “shoso Fukujinzuke” is a product that faithfully recreates the flavor beloved by many when it first went on sale in Meiji 10, as a tribute to our predecessors.
Made with domestically grown vegetables and carefully prepared using Shuetsu’s traditional three-step pickling method, this product offers the deep umami and crisp texture reminiscent of the early days of Fukujinzuke.
